This is the base document of the steps that I took to make Open
Soda. I have included some of the other notes here and there that
I was given, but it should be noted that this is FAR from a complete
set of steps. It is my hope that some or all of this can be used
to create a full set of documentation. That having been said,
here goes:
I
have broken the Soda recipe into four basic parts: flavor oil
base, sweetener base, acid base, finishing products. These
instructions detail how to create each of the bases, how to combine the
bases, then some ideas as to how to modify the bases.
Basic Open Soda
The Bases (based on 1 Keg volume, or approximately 10 2L bottles)
Flavor Oil Base
See the 'Variant Table' at the end of this document
Sweetener Base
- 2.24 Kg Sugar (2240 grams)
- 0.5 gallons Water
Bring 0.5 gallons of water to a boil, then shut off heat. Stir sugar in and allow to cool.
Note: Do not put sugar in before water is brought to a boil, as it cooks the sugar.Acid Base
- 1 Cup Water
- 1 tsp. Gum Arabic (powder)
- 100 ml Citric Acid Mix
- 50 g Sodium Citrate
- 50 g Sodium Benzoate
- 13 g Citric Acid
- 1 L Water
- Flavor Oil Base
- 7 ml Phosphoric Acid
- When working with Phosphoric acid, Only use Glass equipment, until
the acid is diluted at least 30 to 1 (1 cup water here brings this mix
to 34 to 1)
Build per instructions.
Finishing Products
- 1.5 g Caffeine
- Coloring (See the 'Variant Table')
- Water
Add to 'Flavor Oil Base', 'Sweetener Base', and 'Acid Base' in keg.
Preparation
- Create Flavor Oil Base in a beaker.
- Create Sweetener Base and allow to begin cooling.
- Place Acid Base in a blender and blend for 30 seconds to 4 minutes
- (Note: 30 seconds is fine for a test batch, production should be blended for 4 minutes)
- Pour cooled Sweetener Base into keg.
- Pour Acid Base into keg.
- Add Finishing Products to keg.
- Seal keg.
- Cool keg to approximately 40 degrees F (4 degrees C)
- Pressurize keg (shaking occasionally)
Basic Open Soda, Cola Flavor - Test Batch Size
The Bases (based
on 2 Litre volume) (Note, one can make a production size
batch, break it into 10 smaller batches before adding to keg, and use
each as a test batch, to slightly vary flavors)
Flavor Oil Base
- .1 ml Pure Lemon Oil
- .1 ml Pure Orange Oil
- .1 ml Grapefruit Oil
- .1 ml Lime Oil
- .02 ml Cinnamon Oil (Inaccurate, of necessity)
Add each of these to
the Acid base, before blending. Adding to any other
container results in inaccurate flavor, due to oil sticking to the
container.
Sweetener Base
- .22 Kg Sugar (224 grams)
- 1 cup Water
Use hot tap water, and nuke for 30 seconds before adding sugar
Acid Base
- 1 Cup Water
- 1/10 tsp. Gum Arabic (powder)
- 4 ml Citric Acid Mix
- 100 g Citric
- 100 g Sodium
- 1 L Water
- .7 ml Phosphoric Acid (use Pipette)
- When working with Phosphoric acid, Only use Glass equipment, until
the acid is diluted at least 30 to 1 (1 cup water here brings this mix
to 34 to 1)
- Flavor Oil Base
Build per instructions.
Finishing Products
- Generally Caffeine and Coloration are skipped in this quantity, but you may add if you like. .15 G caffeine.
- Water
Add to finished product in 2 Liter bottle.
Preparation
- Create Sweetener Base and allow to begin cooling.
- Place Acid Base in a blender and blend for 30 seconds to 4 minutes
- Add contents of Flavor Oil Base directly to the blender, with the acid base already inside.
- (Note: 30 seconds is fine for a test batch)
- Pour cooled Sweetener Base into 2 Liter bottle.
- Pour Acid Base into 2 Liter bottle.
- Add Finishing Products to 2 Liter bottle.
- Seal 2 Liter bottle.
- Shake vigorously, to mix.
- Install "Pressurization Bottle Cap"
- Attach to Co2 distribution source
- Shake vigorously, allow to rest for several seconds, and repeat shaking, several times
- Disconnect Co2
- Open bottle slowly

- 0.10 ml Wintergreen
- 0.10 ml Cherry
Coloring Needs more red... possibly 10 ml?
- 10 ml Blue Food Coloring
- 8 ml Red Food Coloring
Cherry
Flavor Oil Base
- 1.05 ml Pure Lemon Oil
- 1.05 ml Pure Orange Oil
- 1.05 ml Grapefruit Oil
- 1.05 ml Lime Oil
- 0.20 ml Cinnamon Oil (Inaccurate, of necessity)
- 0.15 ml Cherry
(We need to do a test run at this amount. This was Bill's
suggested amount based on .1 being too weak, and .2 being too strong

Flavor Oil Base- .3ml Lemon / 2L (Might need to ease off on lemon slightly (.05 perhaps?)
